Practices in Entreuprenership:  two periods/one semester (foods and business)  …1st and 2nd order

  • one course learns the cooking/baking skills
  • other course learns the business/marketing/Entrepreneurship skills
  • open on Friday mornings
  • during the semester the class runs
  • opens from 6:50 to 7:50 a.m. (school starts in 7:30)
  • located in the concession stands
  • can start in faculty cafeteria…then move to new locations as business grows
  • students back M-H in class / management with business person
  • teams of 2-3 manage and marker for the week
  • arrive by 6 a.m. on bakery days to set up
  • clean up by 8:20 a.m. (end of 1st hour)
  • currently 15 entrepreneurs for 2009-2010 year
  • @ 2nd hour meet in business class to reflect on who things went…Friday after work, hold a business meeting.
  • Rotate shifts on bakery days
    • barista
    • clerks
    • managers
    • assistants (make pre-order deliveries)
    • sanitation (@ least 3)
  • Chemistry of Foods–cooking and science, two periods, earn sanitation license
  • Reflect and improve each week
    • creative and flexible w/ business decisions
      • not immoral/unethical, illegal, factually incorrect, then you can try it
    • entrepreneur of the week!
  • Teacher generated idea…things people want!
  • start small, build over time—scone and coffee for a $…has grown since!
  • class chose name!  Logo and name and color are all marketing decisions made…name stays, logo changes…mission statement remains!
  • 4 school years, $95 to $509 from year one to year four!
  • increase product lines…cappuccino/hot chocolate machine, big coffee canister, 2nd cash register, time clock for workers and are paid in points!
  • class size 15-20 with a few drops every year
  • merchandising every year!
    • travel mugs
    • t-shirts ($10)
    • services…Pre-orders, catering, special events, staff Thanksgiving desserts, school events–math PI Day, Jazz Feast
    • holidays….Decorate, ribbon cutting, play-off cookies,
    • weekly promotion decided by the management team for the week–holiday, event, etc.
    • students present to PR/Activities decoration
    • cart on wheels for supplies needed weekly
  • Giving back…organization @ school “Magic Closet” for helping those in need in the distract
  • Make the kids be involved in the numbers…control of numbers, create charts, analyze sales figures
  • Where do the profits go—back into the business…show students what the lack of profts would be with salaries included!
  • Pastry cart and coffee makers are a must for the food!
  • Mascot to generate business!  Run down the hallway in costume

  • Future:  eventually a true Connections class!
    • two teachers for period with 40 kids
    • rotate kids in and out of kitchen and “office”
  • Business side:
    • develop business plan
    • fresh ideas to start the year..brainstorm and get the way out ideas down (3-4 pages of ideas)
    • team work stuff…activities to build!
    • Market research…get to know staff/teachers
    • Rotations
      • create a rotation charts…code necessary events…
      • semester long project to do…build time into rotation
      • then business stuff always gets down
      • add a “make up week” to rotation
      • task list to complete
      • all do different, all plenty to do

      • $700 budget for ingredients
      • deposit made daily
      • teacher at register
      • Students are paid w/ free t-shirt, @ cost merchandise, 50% on pastries/coffee
      • interpret sales graphs, survey data, interpret break point analysis, cup and product testing (cups, etc), coffee experiment–test out variations on amount of coffee and filters; cash register and change counting simulations; payroll card and entrepreneur time cards–use to approximate business cost
      • a lot of work!!!

      • paperwork intense–stay organized, keep up
      • student buy-in for early morning/arrival time/finish time
      • you have to do a lot of the accounting work…use good accounting software because you’re the final eyes~!!
      • selling to students–legalities!  competition w/ cafeteria!  Cannot be in same vicinity as cafeteria if it’s food!  Minimal nutritional value items canNOT be sold; use some of cafeteria vendors is a must
      • ELECTRICAL–make sure the school’s electrical service can handle the equipment, especially if it’s professional grade, and accessibility to outlets.

        • need continual access to computers for promotional, marketing and business needs
      • storage space
      • Admin support and community involvement, requirement, promotions
      • Great way to meet staff!  Bring people together!!!
      • Establish activities account and accounting week.
      • Have first week a practice week
      • start your scrap book early!  sell self and keep track of visuals
      • seek grants, get Sam’s clubs card, tax exempt letter, looking for good t-shirt printers, establish vendors, summer curriculum time
      • know your resources
        • Family Consumer Science, art for graphics on menus, web design
      • Thank like crazy…handwritten thank you letter, left-overs to bakery
      • Rolling Meadows was who  Schaumburg modeled after!
